Hello Hello Everyone 🙂
So here is the recipe for my chili I told you I was going to post!!! Now this recipe is vegan and super good and LIGHT.
Here’s What you Need:
2 medium onions, chopped
2 medium peppers, chopped
1 garlic clove, chopped fine
1 28 oz can crushed tomatoes (or diced)
1 14 oz. can beans (I love chickpeas so I use those), rinsed well in a colander
1 small can tomato sauce
1 pkg Yves ground tofu
1 tbsp brown sugar
2 tbsp. chili powder
And How you Make It:
1. In a big stainless steel pot, saute the onions with the garlic over medium heat, stirring often, until they soften.
2.Add the peppers and saute, stirring, for a few more minutes.
3.Add the tofu and saute, stirring, about one minute.
4. Add the tomatoes, tomato paste, beans, sugar, chili and cumin. Stir well and bring to a boil.
5. Cover and simmer for about 45 minutes to an hour, stirring once in a while to keep it from sticking to theh bottom.
6.Add salt and peppr to tatse (not too much). Serve with grated cheddar and sour cream.
I usually serve with some rice. Let me know what you think of it 🙂
