Oatmeal Chocolate Chip Cookies (Healthified)

YUmm, oatmeal cookies are my favorite and this recipe originally came from my grandma’s Cowboy Cookie recipe. I took the recipe and made a few healthy substitutions and they came out really delicious.

Oatmeal Chocolate Chip Cookies (Healthified)

1 cup white whole wheat flour

1.5 cups old-fashioned oats

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

1/4 cup unsweetened applesauce

1/4 cup light butter spread

1/3 cup granulated sugar

1/3 cup brown sugar

2 tsp vanilla extract

1 egg

1/2 cup dark chocolate chips

1/3 cup chopped walnuts

Combine dry ingredients in one bowl. Beat eggs and add applesauce, butter, vanilla, and sugar in another bowl. Mix dry and wet ingredients and add chips and walnuts. Spoon onto baking sheets and press down with a fork. Bake for 10-12 minutes at 350 degrees. Makes about 35-40 cookies.

Nutritional Benefits: This recipe includes heart healthy oats and whole grain flour which provide fiber and protein. The walnuts provide a good dose of omega-3 ‘s and the dark chocolate chips are packed with cocoa flavanols and antioxidants. I reduced the amount of sugar and replaced half of the butter with unsweetened applesauce and the other half with a light butter spread.
