Apple Coffee Cake (Healthified)

Hello bloggies 🙂  I have a new healthified recipe for you!

This is for a healthier version of a previously high fat/ high calorie sour cream apple cake. I was given the recipe by a relative and asked to healthify it for her as she was not too happy with the scary ingredient list but wanted to keep the delicious treat as a go-to recipe. I made a few substitiutions and I think it came out super moist, sweet and much heartier than the first version.

Batter:
1/4 cup light butter spread (like Smart Balance or Earth Balance)

1/4 cup applesauce (not unsweetened)

2 egg whites and 1 egg beaten

3/4 cup sugar

1 cup non-fat vanilla greek yogurt

2 tsp vanilla

2 cups white whole wheat flour

1 tsp baking powder

1/2 tsp salt

1 tsp baking soda

Cinnamon Mixture:
1/4 cup low-fat granola

1/4 cup walnuts

2 tsp cinnamon

1/3 cup brown sugar

add 1/4 cup raisins or craisins for extra sweetness and fiber (optional)

4 medium apples sliced and sprinkled with cinnamon and stevia or sugar

Combine dry ingredients for batter and set aside. Beat eggs with sugar, butter, applesauce, yogurt, and vanilla and then mix with dry ingredients. Combine cinnamon mixture ingredients in seperate bowl. In a bunt pan layer 1/3 of the apples then 1/2 of the batter and 1/2 of the cinnamon mixture. Then layer more apples and the rest of the batter. Now layer the rest of the apples and the rest of the cinnamon mixture. Bake at 350 for 45 to 50 minutes.
